Pumpkin Spice Latte Cookies

Ingredients

1 stick brown butter
1 can squeezed pumpkin puree
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup sweetened condensed milk
1 egg yolk
2 cups bread flour
1 tsp baking soda
1 tsp salt
5 tbsp espresso powder
2 tbs pumpkin pie spice
1/2 package instant butterscotch pudding
1 cup white chocolate chips
1 cup butterscotch chips

Instructions

  1. Preheat oven to 375 degrees F

  2. In a small pot brown one stick of butter and set aside

  3. Empty one cam of pumpkin puree into a towel or cheesecloth. Drain all excess water from pumpkin puree.

  4. Empty drained pumpkin puree into bowl. To puree add brown butter, egg yolk, sugars, instant pudding mix, and sweetened condensed milk. Mix until well incorporated.

  5. To wet ingredients add flour, espresso powder, baking soda, salt, pumpkin spice, espresso, white chocolate chips, and butterscotch chips.

  6. Use a 3 ounce cookie scoop to spoon 12 equal cookie dough balls. Let cookie dough chill for atleast 2 hours

  7. Once dough is chilled, bake cookies at 375 degrees F for 12-14 minutes.
