Gluten Free Apple Pie Muffins

Ingredients

Spiced Muffin Batter
1 stick butter
1/4 cup granulated sugar
1/2 cup brown sugar
2 tsp each of cinnamon, nutmeg, clove, ginger
1 tsp salt, baking soda, baking powder
1/3 cup milk
1//2 cup Greek yogurt
3 tbsp oil of choice
1 1/2 cups gluten free flour

Apple layer
2 apples
2 tsp of Cinnamon, nutmeg, glove, ginger
1/4 stick butter

Streusel Topping
2 tbsp sugar
2 tbsp nut butter
2 tbsp flour

Instructions

  1. Preheat over to 400 degrees F

  2. Create muffin batter by melting 1 stick butter

  3. Mix in sugars, milk, yogurt, and oil until well incorporated.

  4. To wet ingredients add gluten free flour, spices, baking soda, baking powder, and salt

  5. Combine until spiced muffin batter in well incorporated

  6. Next make spiced apple layer by choppin 2 apples in small piece

  7. Cook apples for 5 minutes with butter and spices. Set aside

  8. For struesel topping combine equal parts sugar, nut butter, and gluten free flour.

  9. Layer muffin with batter first, apples, more batter, and nutter butter streusel on top

  10. Bake muffin on 400 degrees F for 5 minutes so they can puff up.

  11. Turn the oven down to 350 degree F and continue baking muffins for 20 additional minutes
