Sugar Free Gluten Free Chocolate Muffins
Ingredients
1 stick melted butter
1.5 cup gluten free 1 to 1 baking mix
1/2 cup yogurt or sour cream
1/3 cup milk
1/4 cup cocoa powder (Dutch processed is best)
2 eggs
1 tsp baking soda
1 tsp baking powder
1tsp salt
2/3 cup sugar free brown sweetener
1/3 cup sugar free granulated sweetener
1 cup of Lily’s sugar free milk chocolate
Instructions
Preheat oven to 400 degree F
In a large bowl combine melted butter, yogurt, sugars, eggs, and milk
Mix until well combined
To wet ingredients add flour, cocoa powder, salt, baking powder, baking soda, and chocolate chips
Use a 3 ounce ice cream scoop to portion 12 muffins
Bake at 400 for 5 minutes. This forces the muffins to have a domed top
Turn the oven down to 350 degrees F and bake for an additional 20 minutes.
