Sugar Free Gluten Free Chocolate Muffins

Ingredients

1 stick melted butter
1.5 cup gluten free 1 to 1 baking mix
1/2 cup yogurt or sour cream
1/3 cup milk
1/4 cup cocoa powder (Dutch processed is best)
2 eggs
1 tsp baking soda
1 tsp baking powder
1tsp salt
2/3 cup sugar free brown sweetener
1/3 cup sugar free granulated sweetener
1 cup of Lily’s sugar free milk chocolate

Instructions

  1. Preheat oven to 400 degree F

  2. In a large bowl combine melted butter, yogurt, sugars, eggs, and milk

  3. Mix until well combined

  4. To wet ingredients add flour, cocoa powder, salt, baking powder, baking soda, and chocolate chips

  5. Use a 3 ounce ice cream scoop to portion 12 muffins

  6. Bake at 400 for 5 minutes. This forces the muffins to have a domed top

  7. Turn the oven down to 350 degrees F and bake for an additional 20 minutes.
