I secretly have a love affair with banana bread. This is mostly for the frugal mother in me. There is something so satisfying about reviving a bunch of old bananas sitting on the counter. Also, when bananas are just about to go bad they are perfect for treats because most of there starches have morphed into sugar. This recipe for triple chocolate banana bread keeps this in mind. Its made with just a few simple ingredients, and helps you not waste those not so beautiful overripe bananas.

This recipe is super simple to make. It all starts with browning your butter. The brown butter really compliments the banana flavors. It also cuts through the bitterness and richness of the chocolate flavors. And while I know browning our butter can feel like a chore, it is definitely worth the trouble.

Ripe Bananas

Sugar: Granulated and Brown

Cocoa Powder

Chocolate Chips

Espresso Powder

Tips for Triple Chocolate Banana Bread

Let the Banana Bread Cool for Cutting- Doing this ensure that all of the hot air will be out of the banana bread.

Grease the pan well– Use butter or cake release to ensure your banana bread doesn’t stick to the pan.

Use over ripe bananas– You want the bananas to be just a little bit past ripe to give the bread a sweet banana flavor.

Equipment

  • 1 large bowl
  • 1 hand mixer
  • 1 large wisk
  • 1 loaf pan
  • 1 skill or sauce pot

Ingredients

  • 3 large bananas
  • 1/2 cup melted chocolate
  • 2 tbsp cocoa powder
  • 1 stick brown butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 large eggs
  • 1 1/2 cup AP flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp espresso powder
  • 1/2 cup chocolate chips

Instructions

  • In a small sauce pot or skillet brown one stick of butter.
  • In a bowl combine warm brown butter, cocoa powder, and melted chocolate
  • In a separate bowl combin ripe bananas, cocoa powder mixture, sugars, and eggs
  • To the wet mix add flour, salt, baking powder, baking soda, espresso powder, and chocolate chips. Mix until most lumps are out
  • Add batter to a greased loaf pan and bake at 350 F for 55 -65 minutes or until an inserted toothpick comes out clean.
