“Your New Favorite Fall Treat: Gluten-Free Apple Pie Muffins”

What would fall be without apple pie? Before I was a baker, I always admired apple pie. The dough is buttery and flakey. And the jammy apple is always a real treat. Every time I have a slice of apple pie, I’m automatically transported to someplace warm and snuggly. That feeling is exactly what I reached for when I developed these gluten free apple pie muffins.

Although this recipe has a few steps, each is super simple. We start by making our apple filling out of apples, butter, and spices. Next we make our spiced muffin batter. Last, we make a simple nut butter streusel topping. Once it’s done, we layer the batter with apple filling, and top it with streusel.

Key Ingredients for Gluten Free Apple Pie muffins

butter– should be melted

eggs

sugars brown and white. (You can also use a white sugar alternative and a brown sugar alternative)

nut butter- cashew or almond

spices- cinnamon, nutmeg, clove, ginger. (You can also use pumpkin pie spice for a shortcut)

Tip and Trick for Gluten Free Apples Pie Muffins

Don’t over cook your apples in the beginning- Only cook apples with butter spices for 5 minutes. The apples will continue to cook in the oven, and we don’t want mushy apples.

Cut your apples small enough– cute smaller pieces of apple so that the initial cook time is enough to partially cook them.

Don’t over mix the batter- Don’t over mix the spiced batter or your muffins will be tough. Only mix until no more flour can be seen.

Ingredients

Spiced Batter

  • 1 stick melted butter
  • 2 medium eggs
  • 1 1/2 cups gluten free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup greek yogurt
  • 1/3 cup milk
  • 3 tbsp oil
  • 1/4 cup granulated sugar or sugar substitute
  • 1/2 cup brown sugar or brown sugar substitute
  • 1 tsp groundcinnamon
  • 1 tsp ground clove
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg

Apple Filling

  • 1/4 stick butter
  • 2 diced apples skin on
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp ground clove

Streusel Topping

  • 2 tbsp gluten free flour
  • 2 tbsp brown sugar or brown sugar alternative
  • 2 tbsp cashew or almond butter

Instructions

  • Preheat oven to 350 degrees F
  • In a medium sauce pot, cook diced apples with butter and spices for 5 minutes. Do not cook the apples to much. Set apples aside
  • In a medium bowl combine melted butter, sugars, eggs, yogurt, milk, and oil. Whisk together until batter is smooth.
  • Add flour, baking powder, baking soda, salt, and spices. Whisk batter only until all flour is incorporated. Batter will be lumpy. Set batter aside
  • In a medium bowl combine sugar, flour, and nut butter with a fork until streusel forms
  • In a lined cupcake pan, spoon a layer of spiced batter
  • Next add a layer of apple filling
  • Add another layer of spiced batter
  • Add a layer of streusel topping.
  • Repeat for all 12 muffins
  • Bake muffin on 350 F for 20-25 minutes
